そのカレーはとても辛いですので、食べられません。

そのカレーはとても辛いですので、食べられません。
→そのカレーはとても辛いので、食べられません。
I cannot eat that curry because it is very spicy.

 

Your statement is not wrong, but ので already conveys a polite tone, so making the word in front of ので polite-style（辛いです in this case）sounds excessively formal. It is more natural to use a plain style（辛い in this case）before ので.

 

e.g.
◎授業が終わったので、帰ります。
？授業が終わりましたので、帰ります。
I’m going home because the class is over.

終わった: plain style of past tense
終わりました: polite style of past tense

*授業(じゅぎょう)
終(お)わった
帰(かえ)ります
