It’s been five days today since I lost contact with her.
今日で
= “as of today” / “by today”
We use で to show a time point where something reaches a certain amount.
So, in this sentence:
今日で5日になります。
= It has been five days as of today.
= Today is the fifth day.
More examples:
今日で20歳(はたち)になります。
= I turn 20 today.
明日(あした)で夏休(なつやす)みは終(お)わりです。
= Summer vacation ends tomorrow.
That’s why we choose で.
