can we say ピザを食べたいです also?
Or should we take が with たい?

We can use both.
A verb that takes the particle を can have either the particle を or が when it is followed by たい.
ピザを食べたいです。
I want to eat pizza.
ピザが食べたいです。
I want to eat pizza.(Emphasizing ピザ)
The meanings of the two sentences are the same.
を is the object marker, and が, in this case, is the emphasis marker.
The difference is that a noun before が is emphasized more than when it is simply an object before を.
