[My correction]

一週間で二回、ジムに行きます。
→一週間に二回、ジムに行きます。
I go to the gym twice a week.

に is used with frequency expressions such as per hour, per day, etc.

[Quantifier(time period)] に [how many]

e.g.
一日に10こ、漢字(かんじ)をおぼえます。
I learn 10 kanji a day.

一週間(いっしゅうかん)に25時間(じかん)働(はたら)きます。
I work 25 hours per week.

オリンピックは四年(よねん)に一回、行(おこな)われます。
The Olympics are held once every four years.

As you may know, に is the particle having the most various functions, and this is just one of them.
